Salsa Verde (Green Salsa). Salsa Verde originated from Mexico and is a green salsa, usually tomatillo based (unlike a red tomato based salsa). - This is a tomatillo. I used ones with large fruit in the middle..
- Peel the tomatillos and wash them well..

- Boil some water with a pinch of salt in a saucepan and add the onion (the quartered half), tomatillos, and cilantro in that order..
- When the water comes to a boil once again, stop the heat and drain the vegetables. Add the vegetables to a food processor and blend them until smooth..
- Transfer the mixture to a bowl and mix in the finely chopped onion, scallions, cilantro, and salt..
- Chill the salsa in the refrigerator and serve with chips..
