This is a memory one as my husband attempted something like this for the kids when I was away on a weekends mothers camp, but his was a disaster. From Debbwl's suggestion I have added strawberries to the recipe but of course you could add other fruit that is in season.

Chocolate Omelette Whisk together the eggs, cream, melted chocolate, confectioner's sugar and a pinch of salt until well-blended. Don't worry if it looks streaky from the melted chocolate.   2. Prepare of berry preserve.
  3. You need of dark chocolate roughly chopped.

An omelet doesn't necessarily have to be savory! I love sweet omelets and this fluffy chocolate omelet is so good! I served it with whipped cream and fresh fruit. It tastes amazing, is very fluffy and looks so pretty.

  1. In a saucepan add the berries and berry essence and sauté for 1 min until it puffs up. Set aside..
  2. Melt the chocolate over a saucepan of barely simmering water making sure the surface of the water doesn’t touch the bowl..
  3. Put the egg yolk, 2 tsp castor sugar and vanilla essence into a bowl and mix together and stir the chocolate..
  4. In another bowl whisk the egg whites until stiff adding the remaining castor sugar slowly little at a time. Fold one quarter of the egg whites into the chocolate to loosen the mixture, then fold in the remaining white..
  5. Melt the butter in a non-stick saucepan on medium heat and add the chocolate omelette into the pan so that it spreads evenly. Cook for 2-3 mins. Pre heat the grill. Place the saucepan into the grill for 1 min until the omelette is set..
  6. Spoon the berry mixture on one side and fold the omelette. Dust with icing sugar and serve immediately..

It's perfect for a weekend breakfast or for a special occasion (think Valentine's Day or Mother's Day)! While omelet is baking, place chocolate and cream in a small heavy saucepan. Cook over medium-low heat, stirring constantly, until the chocolate is melted. Remove from heat and set aside to cool. Stir in liqueur just before serving.
