Take 1tsp butter in a saucepan, add omelette mixture spread evenly, close the lid, cook for two minutes on low flame, with the help of a plate flip omelette in to plate, slowly put back omelette in to same pan to cook it on other side,cook for two more minute on low flame, make sure omelette cooked perfectly,that's all your fluffy, yummy Spanish omelette is done..!!.

Found this recipe on the internet. It had ingredients that I like and was stated to be a typical spanish omelette. Update: This is just the basic start, use this and then add seasonings, vegetables and meats and/or cheeses to suit your taste.
